Ingredients
- 2 naan rounds (I use 3 oz. naan rounds)
- 6 large eggs
- ¼ tsp garlic powder
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp + 1 tsp olive oil, divided
- 3 slices crispy cooked bacon, crumbled
- ½ cup shredded cheddar cheese
- 21 Tbsp chopped parsley, for topping (optional)
- Red pepper flakes, for topping (optional)
Instructions
- Preheat oven to 400 degrees and line a baking sheet with foil.
- In a medium bowl, whisk together eggs, garlic powder, salt, and pepper.
- Add 1 Tbsp oil (or butter) to a large skillet over medium-low heat and pour egg mixture in. Let eggs sit for a couple minutes until they start to set and firm up at edges. Using a spatula, begin to pull the eggs in from the edges to the middle of the pan. Continue this motion until eggs are cooked completely.
- Remove from heat and stir in crumbled bacon.
- Place naan rounds on prepared baking sheet and lightly brush with remaining 1 tsp oil.
- Divide egg mixture between two naan rounds and top with cheese.
- Place in oven for about 10 minutes, until cheese is melted. Remove from oven and top with chopped parsley and red pepper flakes, if desired.
