Instant Pot Shredded Chicken

Ingredients:

  • 1–2 lbs boneless, skinless chicken breast
  • 1 cup water or broth
  • 1 teaspoon sea salt
  • 1 teaspoon ground pepper
  • 2 Tablespoons apple cider vinegar, optional

Instructions: 

  1. Place boneless, skinless chicken breasts in the Instant Pot with water (or broth), sea salt and pepper, to taste and apple cider vinegar, if using. 
  2. Put the lid on, turn to seal, cook for 10-12 minutes, depending on the size of your chicken breasts. Once done cooking, quick release the pressure.
  3. Remove the chicken and shred with two forks or place chicken breasts into a large bowl and use a hand mixer to shred the chicken.
