Honey Lime Peach Salad with Roast Beef and Turkey

Ingredients

  • 2 peaches, sliced into wedges
  • 4 slices McKenzie American Angus Roast Beef, cut into thirds
  • 4 slices McKenzie Maple Honey Turkey, cut into thirds
  • 3 cups arugula
  • ¼ cup crumbled goat cheese
  • ¼ cup crushed pistachios
  • Honey Lime Dressing (recipe below)
  • Black pepper

Honey Lime Dressing

  • 3 Tbsp freshly squeezed lime juice
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp honey
  • ⅛ tsp salt
  • ⅛ tsp black pepper

Instructions

  • Wrap each peach wedge in a piece of deli meat.
  • Place arugula in a large bowl and toss with goat cheese, pistachios, and half the honey lime dressing. 
  • Divide salad into two bowls and top each with wrapped peaches and additional black pepper. Drizzle more salad dressing and additional honey over the top, if desired.

Honey Lime Dressing

  • In a small bowl, whisk together lime juice, olive oil, honey, salt, and pepper.
