Ingredients
- 12 slices of French baguette, sliced 1/2 inch thick
- 2-3 tablespoons olive oil
- garlic salt
- 2 cups iceberg lettuce chopped
- 8-10 cherry tomatoes, cut into quarters
- 4 slices of bacon, cooked and chopped
- 2 tablespoons blue cheese
- 1 tablespoon blue cheese dressing
- 3 green onion, chopped for garnish
- cracked black pepper
Instructions
- Heat oven to 350°. Place baguette slices on baking sheet and brush with olive oil and season lightly with garlic salt. Bake until lightly toasted, 8-12 minutes. Remove from oven and let cool on baking sheet.
- Meanwhile, toss lettuce, tomatoes, bacon and blue cheese in a small bowl, then dress with blue cheese dressing.
- Top each slice of crostini with salad mixture, garnish with green onion and cracked black pepper.
- Serve immediately.
Notes
I used pre-cooked bacon and store-bought salad dressing to make this a super quick appetizer.
